Roasted asparagus with avocado, tofu & chili soy sauce
Ingredient list
For the chili soy sauce
1 shallot
1 chili pepper
1 tsp. sunflower oil
1 tbsp. maple syrup
2 tbsp. soy sauce
1 tbsp. sesame oil (roasted)
1 tsp. lime juice
Black cumin, salt, pepper
For the asparagus and tofu
4 spears green asparagus
1 tablespoon olive oil
100 g tofu
1 tablespoon flour
1 tablespoon sunflower oil
½ avocado
Cress, salt, pepper
How to do it:
Chili soy sauce
- For the sauce, peel the shallot and chop very finely.
- Remove the seeds from the chili pepper, clean it and cut it into very fine cubes - it is best to use kitchen gloves for this - and then sauté it with the shallot.
- Mix the lime juice with maple syrup, soy sauce, black cumin and sesame oil.
- Stir in the shallot and chili pepper.
- Finally, season with salt and pepper.
Asparagus and tofu
- Rinse the tofu, pat dry and cut in half.
- Then roll in flour and fry with olive oil in a pan until golden brown.
- Add the avocado to the pan and fry as well, then keep both warm in the oven.
- Peel the lower third of the asparagus, cut off the ends and finally fry with oil in the pan.
- Finally deglaze with the sauce and serve everything together.
