Sauce Hollandaise

Sauce Hollandaise
125 g butter
2 egg yolks
2 tablespoons water
2 tsp lemon juice
1 tbsp white wine
Salt, pepper
How to do it:
- Melt the butter in a pot. Put the egg yolks with the lemon juice, water, white wine, salt and pepper in a saucepan and place it in a hot water bath. Stir with a whisk until a creamy mixture is formed.
- Remove the saucepan from the water bath and stir in the liquid butter in measured doses, in a thin stream. Season with salt, pepper and lemon juice and serve immediately.
